Trattoria par excellence
This is one of the very few local trattorias which has remained true to itself over the years. La Sostanza is better known among the Florentines as "Il Troia", which was the founder’s nickname. Famous for its cooking, spartan service and home atmosphere since 1869, this restaurant has only two long marble communal tables, where diners sit elbow-to-elbow with complete strangers. The menu includes the restaurant’s signature dishes, that is, artichoke tortino and butter chicken breasts. Seemingly easy recipes, which are actually very challenging even for a Michelin-starred chef. Perhaps the secret lies in the coal-fired stove, which gives all dishes a unique and special flavor. An unforgettable place, where even the King of Italy used to go when he came to Florence.
